Hot Stuff – Horseradish

The bitter herbs referred to in the Passover Seder refer to the horseradish root. Grated horseradish is an ingredient in the Bloody Mary cocktail. Silesians in Poland make horseradish soup. What’s more – it’s good for you! The root is known to have some diuretic properties and has been used to cure urinary tract infections, coughs and even ingrown toenails.

The photo shows prepared horseradish with a section of the root. Lemon juice can be substituted for the vinegar commonly used as a preservative (gated horseradish will quickly turn dark if an acid is not added). The onion can be mixed with horseradish to make a dipping sauce.

To prepare your own horseradish:

Grate horseradish root

Add lemon juice to make a paste

Chop up an onion and saute (or use raw)

Combine the horseradish paste with the onion

Serve
