Cleaning Leeks

When preparing leeks, we want to be careful to get the dirt between layers.

You will almost always find dirt where the leaves leave the stalk. It may be necessary to clean 4 or 5 layers down before finding a clean layer.

It isn't so simple as cutting the stalk below the dirt, because we want to use the part of the green leaf closest to the stalk. That's the first inch or two of the green before it gets too tough.
